Artichoke Heart Dip

This is an extremely rich appetizer. A little goes a long way. Be sure to buy a good quality Parmesan and grate it just prior to making this dish. Serve with chips, crackers or cubes of freshly baked French bread.

Ingredients:
1 can (15 oz.) un-marinated artichoke hearts, chopped
1 1/2 cups Parmesan cheese (freshly grated)
1 cup Vegenaise
1 jalapeno (deveined, seeded and sliced thin)

Directions:
Preheat oven to 350 degrees.

Mix all ingredients and put into ovenproof serving dish. Bake for 20 to 25 minutes, or until light brown and bubbly. Serve hot.
