Grilled Heirloom Tomatoes

Garden fresh heirloom tomatoes ready to grill

There is something magic about the flavor of garden-fresh heirloom tomatoes. When gently grilled with olive oil and herbs, the flavor kicks up more than a few notches. This is a vegan side dish that everyone appreciates. It takes less than 15 minutes to prepare, grill and bring to the table. What could be better?

4 large fresh heirloom tomatoes (cut in half horizontally)
Salt and pepper to taste
2 tablespoons fresh oregano (divided)
2 tablespoons fresh thyme (divided)
5 tablespoons extra virgin olive oil (divided)

Preheat grill to medium-high heat (about 450 degrees).

Arrange tomatoes, cut side up, on rimmed baking sheet. Sprinkle with salt and pepper, then sprinkle 1½ tablespoons each of oregano and thyme. Drizzle with 3 tablespoons of the olive oil, cover, and set aside until ready to grill.

Place tomatoes, cut side up, on grill. Cook until bottoms are charred, 3 to 4 minutes. Turn tomatoes over and grill just to sear, about 1 to 2 minutes. Remove from grill.

Place tomatoes cut side up on a serving platter. Sprinkle with remaining ½ tablespoon each oregano and thyme, then drizzle with more oil, if desired. Serve warm.
