Middle East Carrot Schemer

What is a schmear? According to Wiki it is a word of Germanic origin and the equivalent of the English words smear or spread.

This simple vegan recipe features steamed sweet carrots and takes on the flavors of the Middle East. The carrots are then combined with garlic, cumin, fresh ginger, and tahini and lemon juice and pureed to create a rich mixture perfect for spreading (schmearing) on pita bread triangles.

Ingredients:
12–14 medium carrots (sliced thin)
1 small garlic clove (minced)
½ teaspoon ground cumin
½ teaspoon fresh ginger (grated fine)
¼ teaspoon ground cinnamon
Pinch of cayenne pepper
2 tablespoons tahini
1 tablespoon fresh lemon juice
Salt and ground pepper to taste

Steam carrots until tender, about 12 minutes. Drain and transfer to a food processor. Add balance of ingredients (garlic, cumin, ginger, cinnamon, cayenne, tahini, lemon juice, salt and pepper). Process until smooth adding up to 2 tablespoons water if needed for consistency.
