Black Bean and Fresh Pineapple Salsa

Pineapple Black Bean Salsa

Are you tired of traditional salsa? Want something fresh and different? This combination of black beans, fresh pineapple, red onion, cilantro and lime juice really hits the spot. I like to serve it with tortilla chips as an appetizer and as a side for veggie tacos.

Try this fresh, fruity salsa for a nice changeup from traditional salsa and let me know what you think.

1¾ cups fresh pineapple (chopped)
1 15-ounce can black beans (rinsed and drained)
1 medium jalapeno (seeded and chopped fine)
3 tablespoons red onion (chopped fine)
¼ cup fresh cilantro (chopped fine)
1 tablespoon fresh lime juice
Salt to taste

Combine all ingredients in a large mixing bowl. Cover and refrigerate until ready to serve. Serve with fresh tortilla chips.
