Yes, you can buy a similar dip mix at the store but why not take a few minutes more to make a fresh dip that your friends and family will thoroughly enjoy? This one pairs caramelized sweet Vidalia onios with fresh Chèvre (goat cheese). When folded into a base of sour cream, chives and white wine vinegar it is a true flavor-flash. If you don’t care for the unique flavor of Chèvre, substitute 4 ounces of cream cheese.
This may be made ahead of time, covered and kept in the refrigerator until ready to use.
1 tablespoon extra-virgin olive oil
2 medium sweet Vidalia onions (chopped fine)
Salt and fresh ground pepper to taste
1 cup sour cream
4 ounces Chèvre cheese (room temperature)
1½ teaspoons white-wine vinegar
¼ cup fresh chives (chopped fine)
In a large skillet, heat oil on medium. Add onions and sauté, stirring frequently, until golden brown (about 10 – 12 minutes). Season with salt and pepper and set aside to cool.
In a medium bowl, combine cooled onions, sour cream, Chèvre, vinegar and chives. Cover and chill dip for at least an hour – or until slightly thickened. Serve with potato chips for dipping.
