78. Pimiento-Cheese Spread

Simple and easy Thanksgiving appetizer spread!

I remember mom purchasing Kraft pimiento cheese spread when I was a kid. It was a treat for her and a treat for my brother and me when she spread it on bread and shared it with us. Unfortunately, the glass container it came in was so small that by the time she shared with us, there wasn’t much left for her.

Here’s my recipe for pimiento cheese spread and it makes a whole bunch of spread.

Ingredients:
3 ounces longhorn cheese (grated)
3 ounces extra-sharp white cheddar cheese (grated)
1  4-ounce jar pimientos (drained)
¼ cup Vegenaise
¼ teaspoon celery salt

3 ounces extra-sharp white cheddar cheese (grated)

¼ cup Vegenaise ¼ teaspoon celery salt
3 ounces extra-sharp white cheddar cheese (grated)
1  4-ounce jar pimientos (drained)
¼ cup Vegenaise
¼ teaspoon celery salt
1  4-ounce jar pimientos (drained)
¼ cup Vegenaise ¼ teaspoon celery salt
¼ cup Vegenaise ¼ teaspoon celery salt
¼ teaspoon celery salt

Directions:
Mix all ingredients in large bowl. Cover; chill. Transfer dip to serving bowl. Surround with baguette slices, crackers or vegetables.

Note: Substitute grated Netherland’s Beemster cheese, for the cheddar cheese, and this becomes a whole new recipe!
