Apple-Spice-Walnut Bundt Cake

The fall season is upon us. Why not celebrate with a nice seasonal cake?

This is a moist, tasty cake that is best shared with friends. I like it served cold. Robin likes it served warm with a scoop of vanilla ice cream.

2 cups flour
2 ½ teaspoons cinnamon
2 teaspoons baking powder
1 ½ cups sugar
1 teaspoon salt
2 eggs (beaten)
¾ cup oil
2 teaspoons vanilla
4 cups apples (peeled and diced)
1 cup walnuts (chopped)

Preheat oven to 350 degrees.

Mix first five ingredients together and set aside. In a separate bowl, mix remaining five ingredients and set aside. Now mix both batches of ingredients in a large mixing bowl. The mixture should be very thick so don’t worry. Prepare a Bundt pan and spoon mixture into pan. Bake for 55 to 60 minutes or until done.

Remove cake from oven and let cake cool for 15 minutes. Invert cake onto serving dish and when completely cool, apply a light dusting of powdered sugar.
