This is a perfect quick and tasty dinner for two.
2 cups uncooked penne pasta
1 tablespoon extra virgin olive oil
⅓ cup red onion (diced)
1 clove garlic (minced)
½ medium red pepper (diced)
½ medium green pepper (diced)
1 teaspoon red pepper flakes
½ teaspoon dried basil
½ teaspoon dried sage
1 medium tomato (diced)
2 tablespoons tomato paste
1 cup water
2 Lightlife Smart Sausages – Italian Style (sliced 1-inch thick)
1 cup Feta cheese (crumbled)
Preheat oven to 350 degrees.
Cook pasta according to package directions. Drain and set aside.
Using a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until translucent – about 2 minutes. Add peppers and cook until tender – another 4 minutes.
Add pepper flakes, basil, sage, tomato, tomato paste and water. Stir to combine. Reduce heat to simmer and cook for another 7 minutes. Remove from heat and transfer mixture to a large mixing bowl. Add pasta, sausage slices, and ½ cup of the cheese and stir to combine.
Pour pasta into a 9×9-inch baking dish and sprinkle remaining cheese on top. Bake uncovered for 20 minutes or until cheese begins to brown.
