Kids love this vegan recipe. It is a quick but hearty and nutritious breakfast perfectly measured out for one person. Double the recipe for two helpings. Add fresh blueberries as a topping if you have them. For a gluten-free version just leave out the wheat germ!
½ cup quick oats
½ cup boiling water
1 tablespoon peanut butter
1 teaspoon organic brown sugar
1 tablespoon wheat germ
½ ripe banana (sliced)
½ cup oat milk (room temperature)
Put oats, water, peanut butter, and brown sugar in a bowl and stir together until water is absorbed and oats are soft. Stir in wheat germ. Top with sliced banana and oat milk.
