Trail Energy Bar (energy for the hike back)

Extra energy in these tasty, raw energy bars.


If you plan to take an extended hike on one of our many trails this summer, this raw, naturally sweet, vegan, and gluten-free energy bar is something to seriously consider. I recommend eating it for extra energy on the hike back.


1/3 cup ground flax seeds
1/3 cup hemp seeds
1/3 cup chia seeds
1 cup raw pecans
¼ cup raw cacao nibs
¼ cup sweetened coconut flakes
½ teaspoon salt
9 dates (pitted)
½ cup dried cherries or cranberries
1 tablespoon raw almond butter
¾ cup pumpkin seeds


Prepare a 9×9-inch baking pan by lining it with parchment paper. Set aside.

Place flax and hemp seeds in a 6-cup (or more) food processor. Blend until flax seeds appear to be ground. Add the chia seeds, pecans, cacao nibs, coconut, and salt to the food processor. Pulse a couple of times to mix well.

Add the dates and dried cherries and process until everything starts to stick together. Add in almond butter and blend for about 3 seconds more. Using a spatula, scrape mixture into a large mixing bowl. Add pumpkin seeds and mix with your hands until it all sticks together.

Press mixture into the lined pan (really press hard to compact the mixture into bars]. Cover and place in the freezer for at least an hour. Remove pan and cut mixture into 9 separate bars just before you take off for your hike. Wrap all bars and freeze what you don’t take with you.

Tip: Make the day before and freeze all of the bars. Then they will stay nice and cool until you need them on the hike back.
