This Indian-inspired recipe is great as a dressing for grain-based salads or as a marinade. It is both vegan and gluten-free.
The inspiration for this appetizer came from my friend, Sandy S., who asked what I would serve with my grilled peach, avocado and jalapeno salsa.
This is a fresh salsa with a taste of summer barbecue. What could be better? I think I’ll serve it once with roasted jalapenos and then again with firm, fresh jalapenos sliced super thin.
